This is a very good meal or can use as a side. This is a very good meal or can use as a side.
Number of Servings: 12


    375 g chicken sausage
    1 cup onion, chopped
    1 cup celery, chopped
    1 cup green pepper, chopped
    1/2 tsp dried thyme
    1/4 tsp cayenne pepper
    2 cups Uncle Ben's brown rice (20 min)
    2 cups low-sodium chicken broth
    1 (14oz) can diced tomatoes
    1/2 cup green onion, chopped


Spray a large frypan with nonstick spray. Add sausage and cook about 10 minutes until done. Remove and cut into chunks. Add back to pan.
Add onion, green pepper, thyme and cayenne. Cook about 5 minutes until softened.
Add rice, stir and cook about 1 minute.
Add broth and tomatoes; bring to a simmer and cook, covered, over low heat about 20 minutes or until liquid is absorbed.
Stir in green onions.
Serves 6 as a main or 8-12 as a side.
