Ingredients


    1 cup raw Black Turtle Beans
    1/2 cup cooked brown rice
    1/2 cup sweet onion, chopped
    1/2 medium red pepper, chopped
    4 cloves Garlic, minced
    1 tsp ground Cumin
    1/2 tsp cayenne pepper
    1/4 cup chopped Walnuts
    2 scallions, chopped
    1 tbsp chopped fresh Cilantro
    1/4 cup All Bran
    2 egg whites
    Pam for cooking burgers

Directions

Cook beans (about 45 minutes) , drain and add cooked rice - let cool.

Sautee onions, garlic, peppers and spices.

Blend onion mixture with bean mixture, add Bran and egg whites - pulse in cuisinart

Measure out 1/2 cup for each burger patty.

Cook burger in frying pan coated with PAM - about 3 minutes each side. I use a silicon egg ring to help keep the burger shape.


Serve as you would a normal burger - I perfer in 1/2 a pita with lettuce, tomato, and homemade hot salsa.
