Ingredients

    Chicken Breast fillet, cubed, 250 grams
    Sweet Chili Sauce, 1 tbsp
    Olive Oil, 1 tbsp
    Celery, sliced, 75 grams
    Carrots, sliced, 75 grams
    Onions, sliced, 100 grams
    Honey, 1 tbsp
    Lime Juice, I tbsp
    Ginger, 1 tsp minced ginger
    Tarragon, ground, 1 tsp or a good pinch of dried tarragon
    Cornflour, 1 tbsp
    Water, tap, .75 cup (8 fl oz)
    1 Green Pepper sliced

Directions

* Place chicken , chili sauce & oil & in non-stick pan & brown chicken for 5 minutes.

* Add all other ingredients EXCEPT the cornflour

* Mix cournflour with a little water to a thin paste .

* Bring chicken to the boil & stir in courflour rapidly.

* Serve with rice or a medley of vegetables.
