    1 1/2 cups brown rice
    2 1/2 cups water
    1 Tbsp. olive oil
    1/2 tsp. kosher salt
    1 can black beans, drained and rinsed
    1 cup salsa
    4 Tbsp. reduced-fat sour cream


Preheat oven to 375.

Place rice in 8" square baking dish

Bring water, olive oil and salt to a boil in a kettle or covered saucepan. Once boiling, pour water over rice and cover tightly with aluminum foil. Bake on middle rack of oven for 1 hour.

To serve immediately: Fluff rice with a fork, then stir in beans and salsa. Re-cover and return to oven until hot, about 5 minutes. Top each serving with 1 Tbsp. reduced-fat sour cream

To take to work: Fluff rice with a fork, then stir in beans. Divide amongst 4 containers. In the morning before leaving, top one portion with 1/4 cup salsa and 1 Tbsp. sour cream. Reheat in microwave.
