    1 c. yellow cornmeal
    1 c. flour, sifted
    1/4 c. sugar
    4 tsp. baking powder
    1/2 tsp. salt
    1 egg
    1 c. 2% milk
    1/4 c. shortening (4 TBS)


Sift together cornmeal, flour, sugar, baking powder, and salt. Add egg, milk, and shortening. Beat until smooth, about 1 minute. Pour into 8 inch square pan and bake at 425 for 20-25 minutes.
