Serve chilled, as a salad, side dish, or dessert. Serve chilled, as a salad, side dish, or dessert.

    1 Fennel bulb - sliced thin
    1 Red Onion - sliced thin
    3 oranges
    Salt and pepper to taste
    3 tbsp. Extra Virgin Olive Oil


Slice the fennel and onion very thinly (use a mandolin if you have one), and put them in a large bowl.
Cover with EVO and mix well.
Peel, de-seed, and section the oranges. Mix them in with the rest of the salad.
Add salt and pepper to taste. Serve chilled. Makes about 4 servings.
