    2 pounds baby spinach
    4 slices center cut bacon, chopped
    1/2 large onion, chopped small
    1 cup sliced mushrooms
    2 tablespoons olive oil
    3 tablespoons apple cider vinegar
    salt and pepper
    fresh nutmeg


Heat olive oil over medium heat and add bacon. Brown and reserve crispy bacon bits. Add onions and garlic to oil. Add mushrooms and cook until slightly done. Remove from heat. Add spinach and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and grated nutmeg. Top with reserved bacon.
