    1 cup of fresh eggplant, peeled and cut into small cubes
    2 tablespoons soy sauce
    1 tablespoon light rice vinegar
    1 garlic clove, minced (use 1 small clove or 1/2 large clove)
    fresh ground coriander
    dash of red pepper
    sesame seeds


Peel eggplant and cut into 1 inch cubes. Steam in the microwave (just put in a small bowl with a few tablespoons of water, cover, and cook for approximately 3 minutes.)

While the eggplant is cooking, mix the rice vinegar, soy sauce, and minced garlic.

Sprinkle the mixture over the steamed eggplant. Season with 1/4 - 1/2 tsp of ground coriander and a dash of red pepper to taste, and sprinkle with sesame seeds).
