    1/2 whole onion, chopped
    1 clove garlic
    1 T oil
    2 cups water
    2 chicken bullioun cubes
    1/2 cup salsa
    1 t pepper
    dash cumin
    1 cup uncooked rice
    2 pieces boneless chicken breasts
    1/2 cup cheese
    fresh cilantro for topping


In large covered pot or skillet, saute onion, and rice in 1 T oil, add garlic and water, bullio,salsa and spices; bring to a boil. Cut chicken breasts in half lengthwise--so they are thin. Sprinkle with additional spices if you desire, place on top of rice mixture. Cover pot and simmer for 10 minutes. Turn chicken and cook 5-10 minutes longer.
Remove from heat. Sprinkle with cheese and cilantro. Cover and let stand 5 minutes. Serve with sour cream, tortilla chips, cheese and salsa.
