Introduction

I add cooked cubed chicken to this to make it a meal. I add cooked cubed chicken to this to make it a meal.
Number of Servings: 6

Ingredients

    1 cup whole wheat couscous
    1/2 cup golden raisins or thinkly sliced apricots
    1/2 tsp cinnamon
    1/4 tsp each ground allspice & turmeric
    1 cup anned chickpeas, drained
    1/2 cup finely choppsed sweet red pepper
    1/2 cup chopped green onions
    1/2 cup choppsed pistachios or almonds (optional)
    1/4 cup red wine vinegar
    2 tbsp chopped fresh mint or 1 tsp dried
    salt and pepper

Directions

Combine couscous, raisins, cinnamon, all spice, and turmeric. Pour in 2 cups of boiling water. Cover and let stand until absorbed, about 5 minutes. Fluff with fork. Let cool. Add remaining ingredients. Toss with fork to combine. serves 6
