Ingredients

    1 cup lentils
    1 cup brown rice
    1 tsp cinnamon
    2 tsp. ground cumin
    3/4 tsp. allspice
    1 quart vegetable broth (I use homemade - no salt!)
    1 onion, chopped
    2 onions, sliced into rings
    2 T. olive oil
    dollop of plain yogurt

Directions

I did not measure exactly, but this makes approximately 4 one-cup servings.

1. Peel and chop one of the onions; slice the other two into rings.
2. Saute the chopped onion in 1 T. olive oil.
3. Add the spices, lentils and broth. Simmer on medium heat for 10 minutes.
4. Add the rice and return to a boil.
5. Simmer until rice is tender and fluffy.
6. Serve with a dollop of plain yogurt, if desired. Good with a salad of tomatoes, green onions, cucumber and parsley on the side. Dress the salad with fresh lemon juice, cracked pepper and a drizzle of olive oil. Add a piece of toasted pita if you like.
