A great cold summer salad. A great cold summer salad.
Number of Servings: 12


    6 cups cooked Quinoa
    3 cup Chick PEas (a.k.a. Garbanzo Beans), cooked
    1 1/4 cup Spring Onions, chopped
    1 cup Parsley, chopped
    3 Tablespoons Mint Leaves, chopped
    1/2 cup Lemon Juice


Pre-cook the chick peas and quinoa. Chop everything up and mix together! Makes 12 servings. Serving size 1 Cup.
