Ingredients

    3 eggs
    1 cup oil
    2 cups sugar
    2 tsp. vanilla
    2 cups shredded zucchini
    1 cup crushed pineapple (drained a bit)
    2 cups all-purpose flour
    1 cup whole-wheat flour
    2 tsp. baking soda (sifted)
    1 tsp. salt
    1/4 tsp. baking powder
    1 1/2 tsp. cinnamon
    3/4 tsp. nutmeg
    1 cup chopped pecans

Directions

1. Preheat oven to 350.

2. Using an electric mixer, beat eggs, oil, sugar and vanilla until thick. Stir in the shredded zucchini and pineapple.

3. In a separate bowl, mix the dry ingredients well. Fold the dry ingredients by hand into the egg mixture and blend well.

4. Pour into 2 greased/floured loaf pans. Bake on middle rack of oven for 1 hour.

Loaves can be frozen.
