This is the quickest chicken dish to prepare! I learned this tip from a dietition in a MOPS meeting one night. I make this dish about once a week, sometimes changing it up a bit for variety. Number of Servings: 6

Ingredients

    6 frozen skinless, boneless chicken breast halves
    1 can diced tomatoes, italian style
    8 oz low fat shredded cheddar

Directions

1. Preheat oven to 400 degrees.
2. Place frozen chicken breasts in 13X9 baking dish
3. Pour can of diced tomatoes over chicken
4. Top with shredded cheddar
5. Bake for approx. 45 minutes, until chicken is cooked through.

Serves 6

Such a great meal to enjoy on those busy nights when you are go go go.... takes literally one minute to prep- then bake while you're doing other things. Throw a salad together, and make a side of brown rice (not included in nutritional calculations), and you're all set!
