These were very good. These were very good.
Number of Servings: 3


    5/8 cup self rising flour
    3/8 cup quick cooking oats
    1/2 cup skim milk
    1 medium egg
    1/4 cup unsweetened applesauce
    1 TBSP I can't believe it's not butter, melted
    1 TBSP Brown Sugar
    cinnamon to taste


Mix together flour and oats.
In a seperate bowl, mix milk, egg, applesauce, butter, sugar, cinnamon.
Combine with dry mixture.

Spoon onto hot nonstick griddle. Makes 6-4" pancakes. Two pancakes is one serving.

To make these fluffier, seperate the yolk and the white. Mix everything else and mix the white until it forms a meringue. Fold the white into the pancake mix. I have had them both ways and the quick recipe listed above is just as good, but a little more dense.

Drizzle with sugar free syrup or warmed applesauce.
