    i Tbsp Olive Oil
    1 medium Onion
    1 Head of Celery
    1 Large Potato
    2 tsp Chicken Bouillon concentrate & 2 cups water
    2 cups Soy Milk, plain
    Salt, Pepper and nutmeg to taste


Wash celery thoroughly. If the head is small use all of it; if large, keep the heart for a salad. Chop roughly, leaves included. Peel and chop the potato and onion.
Heat olive oil in pan; add the celery and potato and gently saute the vegetables until well coated and onions are clear.

Add the bouillon, bring to boil, cover the pan and simmer for 45 minutes or until celery is soft. Sieve the vegetable broth mixture and return to pan.

Add the Soy Milk, stir well and heat through. DO NOT allow to boil. Add seasonings to taste. A little pat of butter can be added at serving.

Goes well with croutons. Makes 6 servings.
