    1-2 eggs
    1/4 roma tomato, diced
    1/4 bell pepper, diced
    1 handful of mushrooms, diced
    *can add shredded cheese)


Combine all ingredients and beat until mixed together. Add to heated skillet and cook until egg is cooked completely. I like my omelets broken instead of together, but you can make it this way if you like.
