Introduction

I tweaked this from a diabetic cook book I have and it's great, other than it being a total sodium bomb! Use low or no sodium broth and tomatoes with chilis if you can to lower the number. I didn't have either on hand and so the nutrients values are based on what I actually used rather than what I would have preferred to have used. There is a lot of sauce so it's great served over a whole grain pasta or brown rice with a big green salad on the side! Ingredients

    2 4oz Serloin steaks, trimmed of fat & cut into strips
    Garlic powder to taste
    Salt & pepper to taste (optional)
    1 red bell pepper cut into strips
    1 10oz can diced tomatoes and greenchilis with juice
    1 cup beef broth
    1/2 cup frozen corn

Directions

1. Season beef with garlic powder, salt & pepper (if using). In a large non stick skillet (on medium heat) coated with non stick cooking spray, brown beef with red bell peppers for about 5 mins.

2. Add the tomatoes, beef broth and corn. Bring to a boil then reduce heat and continue cooking for 5 - 7 mins.

Serve over rice or pasta, enjoy!
