    1/2 head cauliflower
    1 c. carrot, sliced
    1 c. broccoli stems and florets
    2 tbsp. extra virgin olive oil
    1 tbsp. balsamic vinegar
    pinch sea salt, optional


1. Bring water and a pinch of sea salt to a boil in a large pot.
2. Blanch all vegetables in boiling water for about two minutes. Vegetables should be brightly
colored and still semi-crunchy.
3. Remove vegetables from water and rinse with cold water.
4. Toss with oil, vinegar and salt and serve.

  • When i made this recipe tonight I did not have carrots, so I substituted onion and mushroom. It was great . My DH said I can make this again. - 11/29/10
