    1 12.8 oz. package organic buckwheat soba noodles
    1 lb. frozen organic broccoli florets, lightly cooked
    6 oz. organic baby carrots (approx. 25 - 30), thinly sliced
    4 tbsp. Full Circle organic Soy Ginger sauce
    2 tbsp. organic toasted sesame oil
    1 tbsp. organic lemon juice
    1/2 tbsp. grated or finely chopped organic ginger
    Topping: 2 oz. toasted sesame seeds


Boil water for soba noodles in a large pot or dutch oven. Cook noodles for 4-5 minutes, until just al dente. Do no overcook. Drain and rinse with cold water.
Whish together dressing ingredients in a small bowl, and assemble broccoli, carrots and soba noodles in a salad bowl or serving dish. Pour dressing on and lightly toss, being sure to distribute vegetables evenly. Top each serving with a spoonful of sesame seeds. Makes 18 - 24 1/2 cup servings.
