    CRUST: (Make 2 crusts)
    180g (1-1/2 cups) whole wheat flour
    180g (1-1/2 cups) all-purpose flour
    3/4 tsp. salt
    1 T. instant yeast
    1-1/4 cups warm water
    1 T. olive oil
    1 lb. ground venison, browned
    8 oz. shredded mozzarella
    4 oz. shredded cheddar
    129g (1 cup) chopped onions
    87 slices Turkey pepperoni
    2 eggs
    2 T. olive oil
    1/2 tsp. garlic powder
    1/2 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. dry mustard
    1/2 tsp. oregano


In a bowl, combine flours, salt and yeast. Stir in warm water. Pour oil over dough and work in with your hands. Set aside to rise for about 1 hour. Repeat to make another ball of dough.
After dough has risen, roll one ball of dough out into a large rectangle. In a small bowl, beat together the eggs, olive oil and seasonings. Brush about 1/3 of mixture onto dough leaving a 1/2 inch margin. Sprinkle on half of the venison, pepperoni, cheeses and onions. Roll dough up into a long log. Seal edges with a little water. Place onto a greased baking sheet with the sealed edge underneath. Repeat with remaining ingredients. Bake at 375 for about 45 minutes. Makes about 20 servings.
