    12 eggs
    1 T olive oil
    1 small onion
    5 c fresh spinach


Cook onion (and some garlic if desired) in 1 T olive oil until tender. Add spinach and cook until wilted.

Wisk eggs, salt and pepper in bowl.

Pour half egg mixture into 8x8 pan sprayed lightly with cooking spray. Layer onion/spinach mixture on top, and pour remaining egg mixture over that.

Bake at 350 for 30 minutes.

Serves 8.
