Introduction

Delicious! I like to top it with freshly chopped tomatoes, sliced black olives and a tiny dab of fat free sour cream. Lots of leftover with this dish. Delicious! Number of Servings: 8

Ingredients

    2 cans black beans
    2 cans diced tomatoes
    1/2 cup salsa
    1 green bell pepper
    1 onion
    1/2 tsp. cumin
    1 pkg whole wheat tortilla shells
    medium block monterey jack cheese

Directions

1. Chop onions and bellpeppers. Saute in olive oil in large pan.
2. Add tomatoes and simmer 5-10 minutes.
3. Drain and rinse black beans. Add beans and salsa to pan, simmer 5-10 minutes.
4. Add cumin and salt to taste.
5. In casserole dish put 1/2 cup salsa mixture on bottom,
6. Cut tortilla shells in half and put one layer on top of sauce.
7. Add another layer of sauce, then cheese, then shells. Repeat until out of sauce and end with cheese on top.
8. Cook at 400 until cheese melted and sauce bubbling.
