Introduction

Nice summer side or main dish. This receipe came from the County Home Economist years ago and has always been a favorite in our family. Nice summer side or main dish. This receipe came from the County Home Economist years ago and has always been a favorite in our family.
Number of Servings: 6

Ingredients

    2 cups elbow macaroni
    1 can red kidney beans dark or light
    1/4 cup pickle relish or sweet salad cubes
    1/2 cup mayonaise
    1/2 cup shredded cheddar cheese
    1/4 cup diced green bell pepper
    1/4 cup diced celery

Directions

Cook Macaroni acording to package directions. Drain and rinse kidney beans. Add to cooked macaroni. Add Pickles, mayo, peppers, celery and cheese. Toss and chill. Add Cubed leftover ham or turkey for more protien and heartier dish. I have even added Spam in a pinch. Six servings.
