    20 oz lean ground turkey
    1 cup onions chopped
    2 cans Tomatoes (I like to use 1 petite diced & one flavored with onion & garlic)
    3 cloves Garlic finely diced
    1 tsp. Paprika (smoked is best)
    10 oz whole wheat pasta (elbows or other shape as desired)
    Cooking spray as needed


Brown Ground Turkey in cooking spray until there is no extra juice left. Set aside. Sauté onion & garlic in the same pan until tender, add extra cooking spray if needed. Return meat to pan. Add tomatoes & paprika (try to find smoked paprika it adds a ton of flavor). Bring to a boil and then turn down to simmer for about 20 minutes.

While sauce is simmering cook pasta as directed on container. DO not over cook - especially if you plan on freezing!

Sauce and noodles should not be mixed until they are ready to eat. Garnish with parsley as desired.

If you are freezing, separate into individual servings and make sure you do not try to mix the pasta and the sauce until after they are heated - otherwise the pasta will soak up too much liquid and fall apart. I put the individual servings of pasta into zip up sandwich bags and the sauce in a container then I heat the sauce for 3 minutes in the microwave add the pasta and heat for 1 more minute.

This stays good in the freezer for 1 -2 months.
