Number of Servings: 48


    1 cup butter
    2/3 cup granulated sugar
    2 cups flour
    1/8 teaspoon salt


Cream together butter & sugar. Sir in flour & salt. Shape into logs 1 inch in diameter and wrap in waxed paper or plastic wrap. Refrigerate for at least an hour.

Preheat oven to 350. Slice logs inch thick & place on cookie sheets. Bake 8-9 minutes until golden at edges.
Chocolate Dipped Shortbread: Melt 6 oz chocolate chips & dip cooled cookies into chocolate.
Cinnamon Shortbread: Roll cookies into 1 inch balls instead of logs& place on cookie sheet, mix cup sugar with 1 Tbsp cinnamon & dip a flat-bottomed glass into the cinnamon sugar & then smash the cookies with the glass prior to baking.
Herbed Shortbread:
Add teaspoon lemon zest and 1 tablespoons minced fresh rosemary to batter.
Iced Shortbread:
Mix cup powdered sugar with teaspoon lemon zest and juice of half a lemon. Use to frost cookies.
