Introduction

Ingredients

    one small cabbage head, cored and sliced to 1/4 inch slices
    two packages (4 oz each) of Boar's Head Pancetta rolled up and sliced thin

Directions

Fry up the pancetta in a pan that has been very lightly coated with nonstick spray, or in a well seasoned iron cast pan. Once it begins to render the fat into the pan add the sliced cabbage and turn until wilted to your tastes. Add pepper as desired. The pancetta carries plenty of salt so usually it doesn't need any extra. I have added various other spices at times: celery seed or fennel seed or coriander all have worked well. Just an eighth to a quarter of a teaspoon to the whole pot is enough. Enjoy!
