    2 tbsp butter
    1-10z pkg frozen spinach thawed
    15oz cottage cheese 2%
    6 eggs, 4 whole 2 egg whites beaten
    1/3c extra lean ham chopped
    1/4tsp salt
    1/4tsp nutmeg
    1/2c parmesan cheese grated
    dash white or black pepper


in medium skillet melt butter. add spinach and cook until butter is absorbed. In large bowl, combine cottage cheese with spinach. Add eggs, parmesan, ham, salt, pepper and nutmeg; mix well.

preheat over to 425 degrees. Place mixture in greased baking dish. bak 20 minutes, Reduce temp to 350 degress and bake another 20 minutes.
