This is based on the sauce from the "Peanut and Sesame Noodles" recipe here in SparkRecipes - I just left out the noodles and added vegies to turn it into lettuce wraps. Delicious and healthy as an appetizer or a main dish.

Ingredients

1 tablespoon sesame oil
3 tablespoons smooth reduced fat peanut butter
1 tablespoon fresh ginger, chopped
red pepper flakes to taste (approx. 1 teaspoon)
3 tablespoons hot water
1 garlic clove, chopped
2 tablespoons soy sauce
1 tablespoon red wine vinegar
3 cups shredded carrots
3 cups shredded cabbage
5 oz julienned turkey breast
2 scallions, chopped
1 tablespoon toasted sesame seeds
Head of lettuce, leaves torn apart (I like butter lettuce for this)
Directions
Combine all ingredients except vegies, turkey and sesame seeds in a large bowl, stirring to make a smooth sauce.
Add carrots, cabbage and turkey, tossing to coat with sauce. (If you like your topping a little less raw/crunchy, you can zap it in the microwave or stir fry for a minute or two at this point; cool a bit before serving.)
Top with toasted sesame seeds and chopped scallions. Serve with lettuce leaves to scoop the filling into.
To make this meal super fast to prepare I use packaged shredded cabbage and carrots, and deli sliced turkey breast that I slice crosswise into strips.
Serves 4 as a main dish (approximately 1.5 cups filling + lettuce per serving); or more as an appetizer.
