Introduction

This is a variation of the jambalaya I like to make in my rice cooker. You can add chicken or shrimp or whatever you like if you want more protein. I also vary the vegetables based on what I have available. This is a variation of the jambalaya I like to make in my rice cooker. Ingredients

    3 cups brown rice
    6 cups water
    1 can Rotel
    1 1/2 lbs turkey kielbasa
    2 cups sweet red peppers, sliced
    2 cups zucchini, sliced
    garlic to taste

Directions

Put rice into bowl of rice cooker. Add water to the proper level for sweet rice (abt 6 cups). Add tomatoes, vegetables, garlic and sausage. Cook as porridge until thoroughly cooked. Serving equals 1 cup.
