Ingredients

    1 cup soymilk
    1 egg
    1/4 cup applesauce
    2 tbsp. olive oil

    1 cup all purpose flour
    1 cup whole wheat flour
    1.3 cup sugar
    3 tsp. baking powder
    1/2 tsp. salt

    1 cup frozen strawberries (chopped)

Directions

Heat oven to 400 degrees and lightly oil or line muffin tins. Beat together wet ingredients. Measure in dry ingredients and mix just until flour is moistened. Stir in frozen strawberries (you can chop them into smaller pieces if desired) just until blended. Divide evenly between 12 muffin tins and bake for 20-25 minutes.
