Introduction

A light, tastey, & low sodium way to use up some leftover chicken. A light, tastey, & low sodium way to use up some leftover chicken.
Number of Servings: 9

Ingredients

    3 Boiled chicken breasts, torn
    (Or leftover roasted chicken, shredded)
    2 Tbsp Olive Oil
    1 med red bell pepper, seeded & diced(optional)
    1/2 large sweet onion, diced
    4 med garlic cloves, chopped
    1/4 - 1 tsp cumin
    Chili powder, to taste
    Salt, to taste

    18 white corn tortillas
    2.5 cups shredded Romaine Lettuce or baby greens
    1 large tomatoe, diced

    OPTIONAL toppings not in nutritionals:
    shredded low fat cheese
    sliced black olives
    salsa of your choice
    nonfat sourcream
    Sliced avocado

Directions

This is a large recipe that can make up to 18 tacos. (serving size is two tacos each)...

Place chopped onions & bell pepper in olive oil over med heat. After they have started to soften a little, add garlic (approx 5min). When garlic has started to soften (approx 1 min more) add chicken & reduce heat to simmer. (Keep a lid on to keep moisture in) If there is not a lot of moisture in your meat you may want to add water or broth. Sprinkle Cumin/chili seasonings over meat mixture & stir. Simmer for approx 10 min longer w/lid on...stirring occasionally.

Warm tortillias on the stove burner. Place a few large Tbsp of chicken mixture down the center. Top with lettuce & tomatoes. (& any additional toppings of your choice)

You can also use the leftover meat for nachos or burritos on another night, yum yum yum!

We have low sodium black beans w/garlic on the side. ;-)
