    1/2 c whole wheat flour
    1/2 c white flour
    1 T blue agave nectar
    1 T unsweetened applesauce
    1 1/2 c nonfat milk

    16 oz low fat ricotta cheese
    1 t honey
    1 T Smuckers simply fruit Strawberry
    5 large strawberries
    1 oz Ghiradelli Dark Chocolate baking squares
    2 T white flour


Mix well the crepe ingredients. heat 6" pan and spray with Pam. remove from heat and add 1/4 c of mixture. Tilt pan to spread evenly around bottom of pan. return to heat until one side is brown. Gently lift edges loosening crepe from pan. Flip onto a paper towl. Repeat makes 8-10 crepes.

Filling: In a blender, mix all ingredients to filling. Add a little non fat milk to blend easier.

Put 2 tablespoons of filling on one edge of crepe and roll up. Serve with fresh strawberries, dark chocolate shavings and a light dusting of powdered sugar.
