Ingredients

    3 Tbsp Olive oil
    1 large Onion
    2 Ribs Celery
    4 clove Garlic
    Black pepper
    1/2 # Savoy cabbage
    14oz Diced tomatoes
    1cup dried Black-eyed peas
    2 quart Water
    15oz Kidney beans
    1/2cup Basil
    1/4cup Parmegiano-Reggiano Cheese
    Parsley, Bay Leaf, Thyme


Directions

Heat olive oil, add onion, celery, garlic, pepper and saute 10 min. Add cabbage, cook untl wilted, 1 min. Add tomatoes, cook 5 min. Add peas, water, bring to boil. Place parsley, bay leaf, thyme in tea diffuser and add to pot. Simmer about 45 min. Add kidney beans, cook 10 min. Add basil and cheese.
