Introduction

This is a simple recipe which I have "lighten" up as much as possible. This nutritional values are with the fat free sour cream. I enjoy making this one as it allows me to be creative with different dried fruits such as mango, apricot. Also, can be made with fresh fruits if you desire.

It's adoptable for Passover by using Kosher forPassover noodles as well as Kosher for Passover ingredients. This is a splurg recipe for me but for once or twice a year it's a treat.

Ingredients

    1/2 pound broad noodles
    2 cups fat free cottage cheese
    2 cups skim milk
    1/3 cup of butter or margarine, melted
    2 teaspoons cinnamon
    1/2 cup sugar
    3 large eggs
    1 teaspoon salt
    1 cup fat free sour cream or plain yogurt
    1/4 cup raisins
    1/4 cup dried cranberries
    1/3 cup slivered almonds
    2 tablespoon sugar

Directions

Cook the noodles according to the directions on the package and drain. Combine the cottage cheese, skim milk, butter, 1 tsp. cinnamon, 1/2 cup sugar, eggs, salt, sour cream and dried fruits. Fold in the noodles. Pour into a 9x12 inch pan. Sprinkle with the remaining 1 teaspoon of cinnamon and 2 tablespoon sugar. Cover with the almonds. Bake in a preheated 350-degree over for 45 minutes or until firm.

Variations: You can try your favorite dried fruit such as papaya, blueberries, strawberries, apricots what ever fits you festive mood. You may also like to try chopping one - two apples sautéed with a teaspoon of butter and a teaspoon of apple spice or cinnamon and add with the cranberries and raisins for a New England flavor. Get creative with this recipe.

    Super delicious! But crazy filling. 3 inch x 3 inch is too big of a serving unless it's your main dish, which it well could be, as filling as it is! - 1/16/11

    Used Splenda instead of sugar and left out the cranberries and almonds for the kind my momma used to make. The plain yogurt worked fine, too. Thanks for the recipe. - 1/29/11
