Ingredients

    SALMON

    4 [ 4 oz. ] salmon fillets [1 inch thick ]
    .25 tsp salt
    .125 tsp pepper

    RELISH

    6 Lrg Navel oranges . sectioned
    1 jalapeno chile ,veins and seeds removed , minced
    2 tbsp minced red onion
    2 tbsp chopped fresh basil
    2 tbsp chopped fresh mint

Directions

Makes [4 servings]
1. Heat oven to 400 degrees F. Spray rimmed baking sheet with cooking spray.Sprinkle salmon with salt and pepper:place on baking sheet and bake 10-12 minutes or until salmon just begins to flake.
2.combine all relish ingredients in bowl.serve salmon with orange relish
