Introduction

This is the first (and only) recipe my dad taught me how to cook. In fact, it is the ONLY thing I knew how to cook when I first shacked up with hubby. It is still a huge favourite in our house. Number of Servings: 6

Ingredients

    1kg skinless chicken breast, cut into bite size pieces
    225g peanut butter
    25g curry powder (Keens is best)
    1Tbsp vegetable oil
    Water

Directions

1. Heat the vegetable oil in a frying pan.
2. Add the chicken and fry until cooked through.
3. Add the onion and stir until about half cooked.
4. Add the peanut butter.
5. Stir until the peanut butter begins to melt, then stir in enough water to make a sauce.
6. Add curry and stir through.
7. Stir in more water if needed. It should be smooth and saucy, but not runny.
8. Serve on Jasmine Rice.
