    1 tbsp canola oil
    1/3 cup carrot
    1/3 cup celery
    4 cups chicken broth
    1 cups water
    12 oz salmon fillet
    2 cup cauliflower, chopped
    3 tbsp chives
    2 cup mashed potatoes
    cup chopped dill (or 2 tsp tarragon)
    1 tbsp Dijon mustard
    tsp salt
    Pepper to taste


Heat oil in large saucepan. Add carrot and celery, stir frequently until brown. Add broth, water, salmon, cauliflower, and chives and bring to simmer. Cover and cook, maintaining gentle simmer, until salmon is cooked through. Remove salmon and flake into bite size pieces.
Stir in potatoes, dill, and mustard, until well blended. Return to simmer. Add salmon and reheat. Season with salt and pepper
