    15 Small red potatoes - quartered
    2 cups Zucchini - sliced or cubed
    1 Tbsp EV Olive Oil
    1 Tbsp Balsamic Vinegar
    1 Tbsp Italian Seasoning


Makes approximately 8 - 10 servings

Cut up the potatoes and zucchini. Put EVOO, balsamic vinegar and Italian seasoning in a gallon size plastic ziploc bag or bowl. Add the potatoes and zucchini and coat well.

Empty onto a baking pan with a lip on it and roast at 400 degrees for 45 min.
