Introduction

Easy low cal meal that can be made for dinner and enjoyed again for breakfast! Easy low cal meal that can be made for dinner and enjoyed again for breakfast!
Number of Servings: 4

Ingredients

    2 cups egg substitute
    1 cup skim milk
    2 tbs fat free half and half
    4 slices of turkey bacon
    1 cup of fresh spinach, chopped
    3-4 scallions, finely chopped
    1/2 mushrooms, 1 small can pieces
    1/8 cup Romano cheese
    1/4 cup italian style bread crumbs
    garlic, salt and pepper to taste


Directions

Spritz a 7x11 pan with nonstick spray and sprinkle the bread crumbs evenly over the bottom of the pan. Chop all veggies and the turkey bacon in to small pieces and set aside. Next, whisk together the egg substitute, milk and half and half. Combine the veggies and turkey bacon with the egg mixture, pour mixture onto the bread crumbs that are in the 7x11 pan and bake for 30-45 min until done in the center and just a touch browned. Let cook before serving as it will fall a little bit. Cut into quarters and enjoy! Serves 4 as a main dish and 6 as a side.
