    ground turkey
    chili powder
    crushed red pepper
    cherry tomatoes
    green bell peppers


Blanche 4 green bell peppers in boiling water for 5 min. and set aside. In 1 T. olive oil, add leeks (sliced and washed) and minced garlic. Add chili powder and crushed red pepper (according to taste). Add handful chopped parsley and basil. Then add cherry tomatoes and put tight lid on pan. Do not remove lid until tomatoes pop open, approximately 6-8 minutes. When done, mix in browned ground turkey and cooked quinoa. Spoon mixture into bell peppers. Bake at 350 degrees for 30 minutes. One bell pepper is approximate 320 calories. If divided in half, makes eight 167 calorie servings.
