Ingredients

    3/4 cup cornmeal
    2 tablespoons soy flour
    2 tablespoons flaxseed meal
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1 1/2 cups plain lowfat yogurt
    1 tablespoon maple syrup
    1 teaspoon canola oil

Directions

Preaheat oven to 400

Combine dry ingredients in a mixing bowl. Add the yogurt and maple syrup. Mix gently, but thoroughly, until the dry ingredients are completely moistened.

Pour the oil into an 8-inch-square baking pan. Place in the oven for 2 to 3 minutes, until hot. Spread the batter in the prepared hot baking pan. Bake for 30 minutes, until the edges are lightly browned.

Cut into fourths to use as a bed for chili, or into 8 or 9 pieces as a side item.
