    1 8oz package Imitation Crab Meat, Chopped
    1 10oz can Green Chile Enchilada Sauce
    1/2 Cup Reduced Fat Sour Cream
    1/2 Cup Tomato Sauce
    7 8in Tortillas
    1 1/2 Cup Salsa
    2 oz Monterey Jack Cheese (optional)


Preheat oven to 350 degrees F.

Prep 9 x 13 baking dish with foil and spray lightly with cooking spray.

In a bowl combine chopped Imitation Crab Meat, 1/2 can Green Chile Enchilada Sauce, Tomato Sauce and Sour Cream. Stir to combine and heat in microwave for two minutes.

Mix remaining enchilada sauce with salsa and set aside.

Fill each tortilla with a little over 1 oz of filling and roll buritto style. Line all enchiladas in pan and top with salsa mixture. Top with Monterey Cheese if desired.

Bake for 15 minutes. Serve Immediately.
