Ingredients


    Peppers, green chili, diced, 4 oz. can
    3 Eggs, lightly beaten
    Squash - Yellow Crookneck, 2 lbs. sliced 1/2 " thick
    Fresh Sweet Onion (1 Medium Raw), large dice
    Coarse sea salt, 1 tabs., plus 1 tsp.
    Healthy Life High Fiber 100% Whole Wheat Bread, 1 serving crumbles
    Organic non-fat milk, 1 cup
    Instant Nonfat Dry Milk Powdered, 1/3 cup added to milk
    panquehue cheese, 1 cup shredded
    Fresh Ground Black Pepper, 1 tsp
    Pepper, red or cayenne, pinch

Directions

Place squash and onion in med. saucepan, and cover with water. Add 1 tabs. salt, and bring to a boil. Reduce heat, and simmer until tender, about 20 minutes. Drain well, and transfer to large bowl.

Add 1 cup breadcrumbs, eggs, milk mixture, 1/2 cup cheese, chilis, black pepper, and remaining salt. Gently stir combine. Pour into a 2 quart baking dish.

Spread remaining cheese and bread over top.

Cover, and bake until set, about 30 minutes.

Uncover, and continue baking until top is browned, about 10 minutes more.
