    1 cup quinoa
    2 cups water
    1 Tbs e.v.oliveoil
    .5 cup finely chopped red onion
    2 cloves of garlic finely chopped
    1 cup thinly sliced baby spinach
    1 cup fresh or frozen baby peas
    sea salt and pepper to taste


serves 4

Rinse quinoa at least 3 times. Combine water and quinoa in saucepan bring to a boil.simmer until all liquid is evaporated (apx.15 - 20 min)
Meanwhile , heat olive oil in frying pan add onions and garlic
cook until tender about 5 min. add peas and red bell pepper
cook for a few min. add the spinach cook until wilted. when quinon is done add vegies to quinoa and serve. either as a meal or as a side for chicken or fish.
