Introduction
Sometimes you know you are going to drink 2 glasses of wine, and that is OK! Knowing this, stop off at the deli and get two slices of turkey breast (be careful, they vary greatly in nutritional value!!) At home you should already have the staples of: frozen edamame (buy individually wrapped, boxes at Costco and always keep these your freezer), Couscous, balsamic vinegar, salt. As well, since this suggested recipe is only 412 calories (INCLUDING the 2 glasses of wine!), add in another 80 calories of your favourite veggies to the couscous if you want to pump the couscous up a little bit. OR, skip the veggies and throw in 80 calories of chocolate at the end of your meal, and go to bed happy full of wine and chocolate, knowing you did not blow your calorie intake of 500 calories for the evening! Ingredients
-
1 package Frozen Edamame (apprx. 1 cup)
Sprinkle of salt
2 slices turkey breast
.5 cup cooked couscous + 1 tbsp balsamic vinegar
2 glasses of wine
OPTIONAL: 80 calories worth of veggies for the couscous or 80 calories of chocolate!
Directions
Obviously, you have had one of those DAYS and the first thing you want to do when you walk in the door is pour a glass of wine and shove something in your mouth! (hey....we have all been there)
First, pour the wine, but do not overpour...stick to the 3.5 oz.
Next, open your freezer where you keep your new best friend, the Costco box of pre-packaged frozen edamames, and pop one package in the microwave for 3 minutes.
You now have three minutes! Maybe turn on your favourite song...take a deep breath.....chill.
Pull out the edamames when they are done, sprinkle with salt, and enjoy them and your first glass of wine while you are preparing the rest of your dinner.
Prepare the couscous.
If you are opting for the additional veggies, chop them up (80 calories could = 1 tbsp chopped onions, .5 cup tomato, .5 cup brocolli, AND .5 cup red pepper)
If you opt for the chocolate, you are looking at 2 mini-bars of chocolate, or exceeding just a bit with the 100 calorie thin chocolate bars.
Either way, with the pre-dinner snack of wine and edamame, followed by the couscous and turkey AND another glass of wine, you should be fine to fall asleep, guilt-free, knowing you did not blow your 500 calorie dinner for this evening.
