    2 tbsp Vegetable oil
    2 lbs Sirloin steak trimmed & cut into 1" cubes
    1 lg Onion, chopped
    3/5 C Green pepper, chopped
    3 stalks Celery
    2 lg Carrots, peeled and sliced
    1 lg Potato, cubed
    2 1/2 tbsp Honey
    2 tbsp Lemon juice
    2 tsp Mustard, yellow
    1/4 C Ketchup
    2 C Water
    2 tsp Salt, or to taste
    1/5 tsp Pepper, or to taste


1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large pot over medium/high heat, heat the oil and quickly brown the beef pieces on all sides. Place the onion, green pepper, celery, and carrots into the pot and fry for 5 minutes; stir occasionally. Remove from heat and add potatoes.
3. In a mixing bowl, combine the honey, lemon juice, mustard, ketchup, water, salt and pepper. Mix thoroughly.
4. Transfer the meat and vegetables into a 2 quart casserole dish and pour ketchup mixture over all.
5. Bake in preheated oven for 2 - 2 1/2 hours or until the meat is tender.
