Introduction

This is my modified version of a Moosewood Cookbook recipe. You can use any combination of beans that you like for this recipe. Sometimes I like to add corn as well. Number of Servings: 16

Ingredients

    2 cups red kidney beans
    2 cups chick peas
    2 cups black beans
    2 cups black eyed peas
    3/4 cup red wine vinegar
    1/4 cup olive oil
    1 T. sugar
    zest and juice of one lime
    1/4 cup chopped cilantro
    6 oz Monterey jack cheese cheese shredded
    1/2 t. salt
    pepper to taste

Directions

Rinse the beans and place them in a large bowl. In a small bowl mix the remaining ingredients for a dressing. Pour over the beans and chill before serving.
