Number of Servings: 4


    Fresh arugala
    A bulb of fennel-only the white part
    Extra virgin olive oil
    Balsamic vinegar
    Parmesan- shaved
    Fresh lemon
    salt & pepper


Wash and thoroughly dry the argugala
Peel top layer of fennel with veggie peeler. Cut fennel in half and thinly slice each half in to half moons.
Shave 1/4 C. fresh Parmigiano Reggegiano
Toss the above ingredients
Add 1 Tbsp of olive and vinegar
Add salt and fresh ground pepper
Add 1 big squeeze of lemon

Toss the entire salad in a large salad bowl and serve
