    1/2 package 100 Calorie Oreo Thin Crisps
    1/4 cup Fat Free Ricotta Cheese
    2 TBSP Fat Free Cream Cheese
    1 TBSP Splenda granulated
    1/2 TBSP Jello Sugar Free Fat Free Vanilla pudding mix
    1/8 tsp Pure Vanilla Extract
    1/4 cup Cool Whip Free
    2 TBSP Fat Free Redi Whip


Break half of the cookies (about 5 cookies) into small pieces and finely crush the other half of the cookies. Set both aside separately.
In a small bowl, combine ricotta, cream cheese (which should be at room temp), Splenda, pudding mix (just the powder - the pudding is not "made"), and vanilla extract. Stir until smooth.
Fold in the thawed Cool Whip, and then gently stir in the cookie pieces.
Cover and refrigerate at lease 20 minutes.
Transfer to a dessert dish, top with finely crushed cookies, and then top with a little fat free Redi Whip.

  • I just discovered HG and made this today. I think its the ricotta that I don't like. Last night after I got home from the gym, I experimented by putting some cheesecake pudding mix in my fage yogurt and it was AWESOME. I'll be using yogurt instead of ricotta next time. - 9/8/10
